The old vines and the unique terroir: Vineyard and cellar are a matter of both heart and mind for us. We know that we can only rely on the quality of our wines if we consistently maintain sustainability and handcraft. Our soil’s health is our most valuable asset, which is why we only fertilize it organically. For our high quality wines, we rely on gentle grape processing and a moderate maceration period.  Due to the cooler weather conditions here at Spitzer Graben, the ideal time for harvesting the grapes is often quite late, which is why we sometimes still pick the grapes from the vines by hand in November.

We rely on long lees aging and allow some of our wines to mature in large wooden barrels – always with the aim of creating wines with power, depth and aging potential.

Wines with character originate where they take root. Every vineyard has its own particular story: You will find their expression and individuality reflected in our wines – above all those at Spitzer Graben. Its climatic conditions reflect the Wachau region at its best. This is where we cultivate most of our vineyards.

Appreciative

The old vineyards are particularly important to us, as they carry the valuable DNA of the Wachau and the Spitzer Graben. They are complex to maintain, but worth every effort. The grapevines already have deep roots, they are resistant to drought, and they absorb many minerals from the subsoil – one of the reasons for the matchless Wachau wine taste.

We have already leased or bought one or the other old, dilapidated vineyard and brought it back to life with new dry stonewalls and frames. Then we straighten the vines and apart from that leave them as they grew. They thank us with the most magnificent grapes.
